"Are you also making French baked escargots?" Eishi Tsukasa casually glanced at the ingredients Renz had picked up and immediately guessed the dish he intended to make. Western cuisine, sometimes, is more like chemical formulas.
Following each step meticulously, with proficiency in those steps, one can generally produce palatable dishes. However, to elevate the dish, one must innovate in other areas. French baked escargots are a famous French dish. Almost everyone studying French cuisine learns this national dish of France. It's a representative dish, but there are many ways to make it stand out.
The Director provided the freshest ingredients in the competition venue. Since they were fresh, they were live snails, and cleaning snails is an extremely time-consuming process.
"Mhm," Renz responded, his hands already starting to process the live snails. White jade snails. Renz placed a little salt inside the snail shells, picked up a bamboo skewer from his utensils, inserted it deeply into the shell, twisting to pull out the meat. Along with the tender snail meat, there was some messy waste. Renz deftly used a toothpick to separate the intestines, placed the meat casually on the cutting board, and then poured white vinegar into the shell.
Fluent. So fluent.
Without the audience even realizing it, Renz had completed the live dissection of the white snails. His skilled technique made him look like a French head chef with over a decade of experience.
"I didn't expect him to know French cuisine too," Roland Chapelle exclaimed from the judge's seat. Just those few steps were enough for him to ascertain Renz's skill level. Whether someone knows how to cook French cuisine doesn't need to be seen from a completed dish; it can be discerned from just a few movements whether they're an experienced veteran. With just those few actions, Roland Chapelle was certain Renz knew how to make French baked escargots.
Renz didn't stop his movements. He kneaded bread from the ingredient area into crumbs, mixed them with butter, and then stemmed and chopped parsley before mixing it in. This parsley is generally called European parsley or simply parsley. It belongs to another variety of celery but differs from common celery.
Aside from the difference in appearance, the taste of parsley is fresher, with a hint of pungency and a subtle sweetness, while celery has a stronger flavor without much noticeable sweetness. Parsley is widely used in Western cuisine as a common culinary herb.
Subsequently, Renz chopped basil leaves, mixed in lemon zest, added lemon juice, sea salt, crushed black pepper, and minced garlic, combining them with the previous ingredients. Each added ingredient complemented and neutralized the others' flavors.
For example, parsley and crushed black pepper are an excellent pairing. Used with fatty meats, parsley and black pepper are even more effective, but with lean meats, one would refer to parsley's kindred, celery. Snail meat was more suitable for the former combination. Here, this was Renz's blend of spices and sauces.
He quickly switched to the processed snail meat, tossing it into a pan and sautéing it with butter, gradually sprinkling brandy into the pan. The brandy's flavor seeped into the snail meat.
Renz effortlessly transferred the sautéed snail meat into a metal bowl, then picked up potatoes, quickly peeled and sliced them, and boiled them. During this process, Renz restuffed the snail meat back into the snail shells, mixed in the pre-prepared sauce, then took out the boiled potato slices, and after draining the water, mashed them with a fork.
He mixed in an appropriate amount of hot milk and butter, and used the mixture to seal the snail shells. He sprinkled a little minced garlic on top.
When Renz came back to his senses, a French baked escargot dish was already prepared on his cooking station. Looking over at the others, both were still diligently working. Compared to the other two, who still had to consider how to combine their spices, Renz's mind automatically brought forth a plethora of spice formulas.
When making a certain dish, the appropriate sauces for that dish would flash through Renz's thoughts. Renz didn't stop there; he picked up another set of ingredients and began the frying and boiling process again.
From the judges' table, they could clearly see the activity at each cooking station. When Renz's French baked escargots were ready, Senzaemon Nakiri and the others were already planning to taste and enjoy the dish.
However, Renz didn't present it; he was going to make a second dish. This caught Senzaemon Nakiri and the others off guard. During a competition, making an extra dish doesn't earn you extra points. In fact, it might even lead to both dishes being of subpar quality due to excessive effort.
Even if one dish was of high quality and the other declined, the judges would consider deducting points. This was an unappealing move. Even if the extra dish was just a broth, it was an unwise move.
In the spectator stands on Totsuki Academy's side, Erina sat with her legs crossed, eyes closed, resting. Hisako Arato sat next to Erina, her expression full of worry.
"Erina-sama, aren't you worried?"
Hisako Arato should have supported Eishi Tsukasa, as he was Totsuki Academy's star. However, after yesterday's shopping, Renz had remembered to win her a plush toy from the claw machine as a gift. And since Erina-sama and Renz were very close, between supporting the academy and Erina-sama, Hisako Arato decisively chose the Erina-sama's side. Seeing Renz face Eishi Tsukasa, Hisako had been nervous since the start. She subconsciously trembled her leg.
"What do I have to worry about?" Erina hadn't even watched the match. Renz was sure to win. When Renz was most engrossed in culinary research, his daughter Rina Nakiri loved French cuisine, and his son Haruki Nakiri loved Chinese cuisine. The dining table often had both French and Asian dishes.
Then, Renz began to devise methods in his cooking to satisfy both his daughter and his son. He eventually walked further down the path of a "demon lord," at one point creating a large number of failed dishes, or "dark cuisine," in an attempt to develop dishes that pleased both. But thankfully, Renz eventually overcame that hurdle. One of the greatest strengths of Chinese cuisine is its research into flavors and its pairing of ingredients.
As is well known, traditional medicine composed of different medicinal herbs yields different effects. Similarly, different combinations of ingredients also yield different flavors. When one ingredient encounters another, it can create a wonderful transformation, producing new textures that burst and ferment on the taste buds.
Two seemingly incompatible ingredients, when paired together, can create an incredibly satisfying taste, and this can only be found through countless trials. Renz was a master of this cooking method. And this wasn't something that couldn't be applied to French cuisine.
Because ingredients are universal. As long as there are ingredients, he can achieve this effect of combined cooking. Did Erina even need to watch this match? Just opening her eyes meant he won. What was there to see? Thinking of this, Erina quietly opened her eyes. She didn't know what stage Renz's cooking skills had recovered to.
He wouldn't really lose to Eishi Tsukasa, would he?
